Caramelized Onion Soup for 2
Mmm….I love French Onion soup and this is a great twist on the classic….I generally just cook for 2 so this is a small batch, just double-up for family size! :)
Caramelized Onion Soup for 2:
5 strips Bacon
1 lg., sweet Onion
2 TBS Butter
1 TBS Sugar
1 tsp Molasses
Salt / Pepper, to taste
1 tsp Italian Seasoning Mix (Oregano/Thyme/Marjoram)
Garlic Spring Tops or 1 Garlic Clove
1/4 c. Red Wine
32 oz. Beef Stock
1/4 c. Kale or Spinach
-> Fry 5 slices bacon, set aside
-> Thinly slice 1 lg. (sweet) onion
-> Melt 2 TBS butter, add onion + 1 TBL sugar + 1 tsp molasses (or dk corn syrup); Add salt/pepper to taste (approx. 1-2 tsp each) + 1 tsp italian seasoning blend (oregano/thyme?marjoram mix); Saute til golden brown on med. high, be careful not to crisp, just a gentle golden brown! :) Approximately 18-25 mins.
-> Add 1 sm clove garlic (I chose to use fresh garlic spring tops from the garden, which i love! so easy to chop & very flavorful!)
-> Next, add 1/4 red wine, continue to cook on med, 2 mins
-> Add 1 carton-size beef stock (32 fl oz)
-> Add 1/4 cup chopped kale or spinach + Crumble bacon into soup
-> Pour glass of wine for self and company, sit & relax while your soup gets tastier & tastier! Great excuse to sit outside & enjoy the fresh air for a minute if the kitchen is too warm!
-> Slice baguette, toast with grated extra sharp cheddar, traditional gruyere or swiss
-> Ladle soup into bowls, top with toasted cheesy bread & enjoy!! :)
…You will have some leftovers, but trust me, you’ll be wanting more of this tasty Caramelized Onion soup! (Tip:*Make some extra & freeze for quick & easy meals!)
